Skirt & Dirt rides on the crest of the gourmet burger trend in hawker centers. The stall’s specialty, however, is one-of-a-kind: it sells Cheese Skirt Burger a juicy beef patty topped with a crispy cheddar cheese skirt. Apart from the burger, fill up on their Cheese Dirt Fries, which are covered with the same cheese skirt and topped with bacon, jalapenos, and relish.
Key Differentiators

- Delicious cheese
Customer Testimonial
When coming up the escalator from the main entrance of the market, take the right wing to find the stall. The market is rather quiet with many stalls not opened when I was there on a Friday late afternoon.
Ordered the cheese skirt burger and the truffle mushroom and Swiss cheese burger. Did a set with fries and salad. The burger beef patties are thick and juicy.
For the cheese skirt, I like the toasted crispy cheese. I used the knife to cut it and combine it with the burger. Toasted cheese gives a nice twist of flavour to the usual melted cheese.
For the truffle mushroom, the balance of flavour with the rocket, truffle mushroom, beef patty and cheese is done well.
The sides are good. Nothing fancy but good compliments to the burger.
Value for money for its price. Overall worthwhile.

In Tiong Bahru, there’s Starter Lab, a famous sourdough-focused bakery that originated in Bali. Their arrival to Singapore was met with much enthusiasm, as their shop would not only sell loaves, but also freshly baked bread items and dine-in treats created using the raw product.

The country sourdough is incredible. The flavour is full yet sour and the texture is soft yet chewy. The food options, which use several of the different breads as base, are also very good (try the grilled cheese).
Will definitely return for the bread.

Established in 1958, this is the famous Jian Bo Tiong Bahru Shui Kueh which made it to the MICHELIN Guide Bib Gourmand for several years. They have quite a number of outlets across Singapore but I think this is probably the best.
The chai po and heh bee (pickled radish & shrimp paste) in chilly oil blends very well with the rice cake.
Disappointingly, this shop accepts CASH only despite its franchise.

You’ll need to get there early in the morning and be patient while waiting in a line. However, their freshly cooked char siew and siew yoke are well worth the wait. You may have the char siew and roast pork over rice or noodles with a thick, savory sauce.
The siew yoke is crackly, yet soft enough to be completely savored, and the char siew is wonderfully smoky without being cloying. To balance the meatiness of the dish, a generous side of sour vinegar chili is required.

Tiong Bahru Hwa Yuen Porridge fans particularly enjoy the Pork Porridge. The porridge served here has a silky texture that makes each mouthful pleasant to eat and easy to swallow. It’s also not overly sticky, making it neither cloying nor clingy.
The porridge is also aromatic, and it isn’t at all bland, as one might anticipate from a bad bowl of porridge. There’s a hint of sesame oil in it, which gives it even more flavor. They have been in operation for many years, and they still serve porridge that will warm your body and soul.
