The Michelin star rating system is a measure of the quality of restaurant cooking. All these restaurants are rated by anonymous food critics, who visit them anonymously and pay their own bill to ensure impartiality. Michelin stars are awarded for excellence in cuisine and presentation, but not for ambience or service. The Michelin star rating system was originally created in 1900 by French brothers Édouard and André Michelin as part of an automotive guidebook.
The Michelin Guide Singapore 2021 has made a major announcement, Singapore now has three 3 Michelin-starred restaurants.
This year’s list was made public through a virtual livestream, which took place on Wednesday (Sep 1), rather than a physical celebration. The previous physical event for the guide’s release was Capella Singapore in 2019, where 44 restaurants were awarded Michelin stars.
After a trying year for restaurateurs, the announcement of this year’s Michelin Guide Singapore has arrived.
This year, a total number of 49 eateries were awarded stars, Michelin Bib Gourmand Restaurants. Four new restaurants debuted in the one-star category: Art, Cloudstreet, Oshino, and Sommer.
Three Michelin guide Singapore restaurants were given one star as they debuted, while five were upgraded from Michelin Plate. Basque Kitchen by Aitor closed, Whitegrass and Lerouy opened, and Cure, Esora, Thevar, and more restaurants were promoted.
Many of the island’s top fine dining establishments, such as Les Amis, Odette and Shoukouwa, have retained their ratings while Restaurant Zen and JAAN by Kirk Westaway were able to add another star to their names.

Shisen Hanten is Japan’s most popular chain of Szechwan eateries. It has 14 restaurants in six cities across Japan and debuted in Singapore in 2014 at the 35th floor of Mandarin Orchard Singapore.
Szechwan cuisine began in 1958, when Chinese immigrant Chen Kenmin, known as the “Father of Szechwan Cuisine,” opened Japan’s first Szechwan restaurant.
Kenichi’s family has been running a restaurant in Japan since the 1980s. His eldest son, Chen Kenichi, better known as “Szechuan Sage” and an Iron Chef, continued the family business and expanded it throughout Japan. His best-known recipes emphasized the seven primary tastes that give Szechwan cuisine its unique pungence.
Third-generation Chen Kentaro, the amiable Executive Chef Chen Kentaro, now leads the pack. He is a rising star in Japan’s culinary atmosphere, bringing to Singapore his grandfather’s goal of elevating Szechuan cuisine appreciation through their signature dishes.
They have Five Signature Appetizers, a set of five savory dishes ($24), and Chen’s Mapo Doufu ($26), which is stir-fried tofu in hot Szechuan pepper-flavor meat sauce, are Kentaro’s specialties. One Fullerton’s sushi restaurant, which is run by the founder of Hong Kong’s three-star Michelin Sushi Shikon and the Emmanuel Stroobant restaurant group (which runs Saint Pierre), is a collaboration.
Given that Michelin inspectors will need to visit a restaurant several times (we hear three), they had only a brief time period in which to do their evaluation.
Kanesaka declared that Shoukouwa was superior to Shinji, Singapore’s best sushi restaurant, in his book Sushi Koshu. Hashida Sushi, Ki-Sho, Shiraishi, AOKI, and Sushi Mitsuya were all absent from the scene.
Expect prices to be rather high. Shoukouwa felt that there was a higher degree of variety and excitement in terms of providing, when compared to Shinji by Kanesaka.

One thing is for sure: Waku Ghin sits easily among Singapore’s Michelin-starred restaurants in terms of fine dining. Tetsuya Wakuda, the restaurant’s chef and owner, is a renowned figure in the region, having trained such Michelin-starred talents as Sam Aisbett (Whitegrass) and Rishi Naleendra (Cheek by Jowl) have honed their culinary skills under his tutelage, before moving on to helm their own establishments here.
The traditional design of Waku Ghin is reflected in its classicism; the interiors avoid any gimmicks, with no bare-bones floors or hidden doors. Instead, the restaurant maintains a tried-and-true design of chi-chi flooring, slick marble worktops, and cozy dining rooms with a bespoke grill that is an essential element of the whole experience. But we’re not here to admire the décor. This chef/owner has a good reputation in the culinary industry.
Waku Ghin doesn’t use the smoke-and- mirrors trap that some high-end restaurants fall into. There’s no need to put out effort trying to wow an Instagram savvy diner at Waku Ghin, because solid ingredients and a genuine love of the farm-to-table approach form the basis of an excellent dinner. Take a few photographs, though. It’s an incredible experience that will be remembered for a long time.

28 Wilkie is located in a rather quiet stretch of Wilkie Road, but it’s not hard to find. The vibe is relaxed and the interior simple—all clean lines, white walls with black accents on the banquettes and drink counter. And while 28 Wilkie may be hidden from plain sight, its food has been quietly making waves among diners who have discovered its charms.
It is the city’s first caviar bar, and it serves five varieties of black gold from its own farm, as well as tasting flights or individually—with an interesting wine list to match.
However, the cuisine, which is a modern interpretation on Italian food from the kitchen team, is also a compelling incentive to go. His mother’s Piedmont tajarin pasta with lobster, Sicilian pesto, and lemon is his grandmother’s recipe.

The Goodwood Park Hotel in Singapore is home to Juan Amador, the German chef who founded his own eatery known as Alma. Spanish for “soul,” Alma restaurant is a Modern European restaurant with Asian influences inspired by Iberia.
Alma was the first recipient of the Michelin stars in Singapore, receiving one in 2016. It still has one star today, which is remarkable in a city with so many fantastic restaurants. Alma is well worth a trip away from downtown Singapore, located some distance away from the city center.

Chef Aitor, who runs the restaurant’s Basque Kitchen by Aitor, is said to have family ties in the Basque region. He had studied at some of the most renowned eateries, including Mugaritz in Spain, The Fat Duck in London, and Iggy’s in Singapore.
Their cuisine is modern European with Basque and Singaporean influences. The food in this one-starred Michelin resturant are amazing which proved that it’s possible for a restaurant to be excellent on every level – even if they haven’t spent decades building up their reputation.
They have a dining area that can only accommodate 25 people. The dim lighting and dark wood furniture create a warm atmosphere that encourages you to stay longer at the table, savoring every bite of your meal.

Beni is a French fine-dining restaurant with Japanese and European influences that serves oriental cuisine. The menu varies depending on the seasonally available ingredients, but signature dishes include melt-in-your-mouth Akaushi beef steak and delectable lobster cooked in sake lees.

Chef Denis Lucchi runs Buona Terra, a fine-dining Italian restaurant with one Michelin star. The location of Buona Terra, which is housed in a colonial building along Scotts Road right next to Ki-Sho, is a private area with basic interior furnishings that nevertheless appears elegant. There is also a single intimate nook at the restaurant’s rear, which has been open for eight years!
Buona Terra’s cuisine is influenced by Northern Italy. The Buona Terra Experience 5-course (from S$178++) dinner menu is advised, with minor modifications to the dishes depending on seasonal availability and availability of daily ingredients.

Burnt Ends, a contemporary Australian-style barbecue restaurant that features counter seats and an open kitchen that may well be considered more casual than fine dining. It’s located at Teck Lim Road (a short walk from Singapore’s Chinatown), next to the Burnt End Hotel.
These machines, ovens, and grills have been modified by Chef David Pynt (backed up by Loh Lip Peng and Andre Chiang) to allow food to be smoked, roasted, or cooked directly over coals at 700 degrees Celsius. When the heat is turned up, the tastes become more evident.
The menu is seasonal, and some offerings then included a Pork Tomahawk, Apple and Bourbon Glaze ($23 per 100g), Rump Cap Burnt Onion and Bone Marrow ($26 per 100g), Alfonsino Red Bream ($70 for 5 people) and King Crab and Garlic ($95).

Candlenut Singapore is the first and only Michelin-starred Peranakan Restaurant in the world. Since 2016, chef Malcolm Lee has moved his restaurant twice, from New Bridge Road to COMO Dempsey (2017) and then to a colonial house on Dempsey Hill.
Mr. Lee’s cuisine is Peranakan in origin, drawing on Chinese ingredients and methods. The cuisine has been dubbed ‘eccentric traditional’ since he applies old recipes to completely different foods.
The restaurant’s chefs have a flair for presentation, with meals ranging from bite-size platters with up to 100 possibilities to the more elaborate 20-course tasting menu. Every one of their valued guests is completely satisfied and permitted to eat whatever food they choose without feeling obligated to try the other choices.
The large ceiling, spacious rooms, bamboo lampshades, and hardwood tables contribute to the overall sense of wholesomeness during the meal, as well as the dishes served by caring and pleasant workers.

When Chef Ang Song Kang, better known as Chef Kang, was promoted to one star in the Singapore Michelin Guide 2021, he became even more well-known and prominent.
While he was already well-known in Singapore’s culinary world, few would anticipate the Michelin inspectors to pay attention to this inconspicuous eatery near Little India. It isn’t fine dining, but it makes dining exquisite.
It’s a one-man show in the kitchen, with Chef Ang cooking each meal and his apprentice busy with other tasks such as chopping vegetables.
The restaurant’s interior is a private dining room with just five tables (formerly four), three of which are in secluded rooms, while one is just beside the kitchen.
Chef prepares a Cantonese dish with the freshest ingredients from the marketplace. He goes to Hong Kong and Guangzhou occasionally to get ideas and stock up on unique items. If you visit on a regular basis, he may create some off-menu dishes to keep you hungry for more.

Chef Rishi Naleendra, known to Singapore for Modern Australian masterpiece Cheek By Jowl and internationally as the first Sri Lankan chef to earn a Michelin star, draws inspiration from his heritage in order to create meals that soar.
However, it would be a mistake for people to assume that they are eating at a Sri Lankan restaurant. Cloudstreet is like its Amoy Street neighbor Nouri in that it is unique and wonderfully defies categorization.
One of these dishes, or a combination of the two, could serve as Cloudstreet’s calling card, since Naleendra’s Modern Australian cuisine is already well-known for one giant step further with deeply personal Sri Lankan nuances. But taken as a whole, with so many different textures, tastes, hues, and scents, they’re almost overwhelming in their uniqueness; you will become accustomed to seeing food that embraces the past, present, and future while also recognizing all of your connections along the way.
Cloudstreet is home to an Art Deco sanctuary with modern, creative flourishes of smart and odd pleasures. Look in the back corner of the private dining area for a bookshelf filled with culinary tomes, several ancient liqueur bottles, and even an unassuming scroll of old Sri Lankan scripts. Take a closer look at the kitchen staffs’ aprons from local design firm Mizbeth, and you’ll notice discreetly placed patches that resemble comic book panels inked with manga zombies and psycho ninja geishas.

The historic house of Eldred John Henry Corner, who worked as the assistant director of Singapore’s Botanic Gardens from 1929 to 1945, serves as the home for Corner House. It is also a UNESCO Heritage Site. At day, sunlight streams through the rooms; at nightfall, warm lighting fills the area with a pleasant dinner time atmosphere.
The majority of visitors here are on a date for their birthday or anniversary; groups of company executives occasionally gather in one of the house’s secluded areas. Everyone is quiet and well-dressed.
The owners of the restaurant also own a wine distributorship, so the wine list is excellent and wide-ranging, dominated by Old World labels.
A renowned Singaporean chef, Jason Tan, serves cutting-edge, produce-driven cuisine in a collection of eclectic ceramics on his own. Every dish contains many components, which demonstrate the team’s craftsmanship and care for detail.
Corner House has garnered a slew of honors since it opened in late 2014. Aside from the great food, the front-of-house personnel provides excellent service.
This is a special-occasion restaurant, with dishes to match. If you come for lunch, you’ll be able to sample Tan’s cuisine at a lower price.

The Cure’s dining room is classic and moody. An open kitchen in the back is framed by glossy teal, which captures the essence of this place perfectly. There’s a lot of slate, dark wood, and black here to give it a strong British vibe.
Andrew Walsh, the chef at Cure, takes his culinary talents from his time working under British chefs such as Jason Atherton. The distinctive finger food served at Walsh’s restaurant is sourdough with whisky-brined preserved cabbage and bacon butter, a homage to traditional Irish cabbage and bacon.
The restaurant manager has a clear view of the dining area, and when the frequently young service team stumbles, he’s ready to assist. The service is generally competent and informed.
While the cuisine at Cure tastes like high-end dining, the modest restaurant maintains a low-key atmosphere; it’s ideal for any event thanks to its lack of a dress code.

Cut by Wolfgang Puck is a steak restaurant in Singapore that many steak enthusiasts should be familiar with. The company’s first Asian location is located in Marina Bay Sands Singapore, where the renowned steakhouse has been rated One Michelin Star since 2016. The interior of the restaurant is decked out in classic New York style, with a dim atmosphere. The romantic atmosphere, I believe, has a significant impact on most of the dining groups that I observed.
There are a lot of cuts of meat to choose from on the menu. The early dinner menu is served between 5:30 and 7 p.m., referred to as the pre-theatre menu, and it’s quite inexpensive at S$95 for a three-course meal.Bread and rosemary-flavored French butter were served with the meal.
The Austrian Oxtail Bouillon, Chervil, Bone Marrow Dumpling; and the Maryland Blue Crab Cake, Heirloom Tomato Relish, Basil Aioli are just a few appetizers to consider.
Cut provides an outstanding service. It will remind you of New York-style service, in which each employee is encouraged to provide excellent service and makes an effort to remember your names. Food is unquestionably good, and this is one restaurant that you should visit if you want to dine in peace while still enjoying a wonderful meal with attentive staff.

The Lo & Behold Group’s Esora, has a 26-seater Japanese restaurant in a heritage shophouse and contemporary kappo cuisine – simply defined as “to cut and cook” – plated by chef Koizumi.
At the beginning of your meal, you’re greeted with a cup of warm dashi stock. Chef Koizumi’s dashi includes katsuboshi (dried, fermented skipjack tuna), bonito, and kombu (edible kelp), which blend well with yuzu zest and sake.
The tea pairing, in which both beverages are tailored to one another’s strengths, is the meal’s true triumph. Tea is elevated to an art form here; it’s brewed to ideal temperatures and served in the thinnest, most delicate stemware and champagne coupes.
The seven- and nine-course seasonal menus are priced at $198 and $258 per person, respectively. A nine-course Chef’s Menu is also available for $308 per person. The tea pairings are priced at $38 and $48 for the seven- and nine-course breakfasts, respectively.

The Hilton Singapore’s One-Michelin starred restaurant is housed in an open kitchen design. It is a 32-seat, intimate room with a wooden communal table in the middle. Corner tables are the finest seats at the house.
Iggy’s offers a mix of Japanese and other ingredients in its cuisine. The Gastronomic Menu for dinner costs S$275++, which is an eight-course journey through culinary delights. The menu for the Citi Prestige reservation was almost identical to the Gastronomic Menu, so it was basically the full dining experience.

Ma Cuisine is divided into four distinct spaces — a charming alfresco area, a wine cellar, port vault and the main dining area. Raw wood furnishings and the red leather banquettes that line its walls give the restaurant an industrial, but homely vibe. The space is livened up with accessories that hint at the duo’s passion for vino, such as the one-of-a-kind Hubert Le Gall mirror designed to look like champagne bubbles, and tables etched with wine crate labels.
The wine list at Ma Cuisine, curated by sommelier Charmetant, is the lifeblood of the gastro-bar. Those who truly appreciate wine should go to the cellar and search through the gems proudly displayed on honey-coloured shelves, such as a complete selection of Chateau Lafite Rothschilds, and Chateau Y’quem’s finest vintages.
Ma Cuisine’s cuisine programme, on the other hand, is a refreshing take on French cooking that strips it of all pretentiousness. We enjoyed four dishes at the gastro-bar, each accompanied by a wine.
Ma Cuisine excels in two key areas: it serves wine options that are comparable to some of Singapore’s most expensive wine without succumbing to the frills and snobbery that plague them.

Ivan Brehm, as part owner and chef of Nouri, has an impressive career background that includes working at some of the world’s best restaurants, including as a development chef in The Fat Duck’s experimental kitchen for four years. Nouri debuted in 2017 and earned one its first Michelin star on its first year.
Nouri refers to the term nourish, which is a reference to the restaurant’s cuisine feeding the guests; but Brehm also wants that name to encourage people to be considerate towards others.
At Nouri, Brehm develops what he calls “crossroads cuisine,” an exploration of ingredients and cultures from various places coming together at the junction.
The open kitchen is highlighted in this modern, minimalist dining room. There are no tablecloths here; the atmosphere is relaxed, even as the cuisine is exquisite. Chefs frequently serve customers while also operating a restaurant and utilizing Brehm’s open-kitchen concept to engage with clients directly because he feels it adds ‘human touch’ back into the food.
Brahm’s ethnicity is varied, including Italian, German, Brazilian and Spanish. He credits his multiethnic background with allowing him to have a more accepting attitude toward other cultures, even those not of his own. Oshino serves such amazing cuisine that it urges you to write poetry – a haiku, of course. While it’s nice not having to worry about choosing from the menu, Oshino doesn’t allow you (for most of the time) to create a mouthful. It’s been done for you. Some people find this a violation of civil rights, but when you put your faith in the chef – as you must do when traveling down the omakase path – and that chef is excellent, the lack of selection becomes an important element of the experience. Koichiro has been practicing his art for over 30 years and has established a reputation as a great Edomae sushi chef.
