After the founder, Mr Ng Chang Siang, died, his son took over the business. You may also see his aunt frying there now.

Smoked fish and beef kebabs, a dish known as “silog” in the Philippines, are available at some restaurants. This fried kway teow ($3.50/4.00) is popular in Singapore because of its spicy chili sauce and crunchy bean sprouts with Chinese chives that give it an unique flavor profile.

For many years, it’s been cooked in a two-cycle stir-fry process. The first cycle starts with wok-frying a large part of kway teow noodles in some light soy sauce. They still retained the same ingredients of lup cheong, fishcakes, clives and cockles. The crispy pork lard hides within the dish but you know it’s there when it crunches in your bite. Taste wise it’s still there but probably just slightly lower, maybe due to the different grade of smaller sized cockles. Overall, this is still a decent plate of char kway teow and I would not mind queuing for it.

Mr Loh Kwee Leng, the founder of Hai Kee Teochew Char Kway Teow (which was founded in 1967), has been serving CKT for over 50 years! The CKT ($4/$5) at Hai Kee is straightforward and traditional; it includes a lot of cockles, bean sprouts, and fried lard. It has a robust wok hei and is fried in a watery state.

Expect a 45-minute to 1-hour wait at this CKT location in Singapore, which is one of the most popular. Because he fries only one plate of char kway teow at a time, there are lengthy queues!

One of the few very good old school Char Kway Teow (CKT) stalls in Singapore. Have followed the chef since he was at the demolished Margaret Drive hawker. Long queues are expected as he works solo and fries every order individually. This is probably one reason why each plate of CKT tastes so good. His CKT is slightly towards the soggy version. Pork lard occasionally crunches as you bite. The cockles are fresh and juicy.

Definitely worth going out of the way or making a special trip down to queue when having cravings for CKT.
