No introduction is required for Nobu, but Yoshii Omakase, a more refined take on the Japanese-Peruvian fusion cuisine of The Crown Sydneyâs iconic restaurant, has taken up residence there. Ryuichi Yoshii is in charge, having almost four decades of experience working throughout Japan and Australia, where he was known for his attention to detail and flair. A cozy little nook of modern-style authentic Japanese cuisine has emerged on the outskirts of Glebe thanks to owner and chef Yoshinobu Harada. Harada, who was 29, opened his first Izakaya restaurant in Sydney, a dining concept that combines alcohol with tiny dishes, where he further refined his ability to adapt menus creatively. Now, he has perfected it with his inventive omakase cuisine, which is almost all accompanied by Japanese whisky, sake, and wine.

Itâs difficult to get a seat at chef Takashi Sanoâs omakase counter at Sokyo. The line for the coveted 23-course tasting menu is usually several months long, but reservations far in advance are well worth it. Chase Kojima, executive chef at Sokyo, believes that starting with the appropriate individuals and obtaining the greatest fish is critical to success.

With decades of culinary experience and working in restaurants all over the world, from Tokyo to Amsterdam to London and Sydney, Yusuke Morita opened up Kisuke in Potts Points in 2020. Mirotaâs restaurant, which he runs with his wife, is a tiny spot that seats just six guests and showcases a lifetime of dedication to and expertise in traditional Japanese cooking. The Kuon Omakase at Darling Square is a must-try. The trendy and modern wooden design of the little restaurant revolves entirely around the chefâs station, which is hidden behind a massive sliding door. The small number of select guests at this private farmstay dine on an ever-changing menu of 20+ courses created by master chef Kideaki Fukada, who also offers bespoke fine dining services.
