The unsung cook at Keji’s House of Ramen in Kaimuki, Keji Mizuno, uses a unique broth-making method that is commonly used in ramen shops in Tokyo’s Bunkyo district. That’s essentially brewing ramen stock with coffee siphons, which would explain the row of flasks that oddly bubble behind the bar at Umami Dojo. The flavor is richer and more delicate, with bonito, dried sardine, and spicy niboshi taking center stage. They all make use of a chicken-based broth rather than tonkotsu.

The city’s ramen scene wouldn’t be the same without RaRa Ramen, which has become so important that it may well be Sydney’s best ramen restaurant if you want to convert people who don’t regularly consume it. You should also check out RaRa Chan, the latest venture from the group, which has a similar name. It’s in the new dining precinct in South Eveleigh. Bones Ramen is a cheerful 20-seat restaurant that emphasizes fresh, local ingredients and in-house production of broths and soy seasoning. Their karaage is a must-have too, it’s crispy, lightly battered and lightly doused in soy.

Yasaka Ramen has been serving bowls of deliciousness for six years now! You can often spot their neon sign from a distance which reads “no ramen, no life”. We definitely agree with that message. But don’t be fooled; this eatery is always packed. If you’re looking for amazing ramen but don’t want to travel into the city (where the best ramens are usually found), Kuroneko is perfect for you!
